1: Trim your tenderloins and remove the silver lining; add meat and marinade ingredients to a zipper bag and refrigerate for at least an hour or overnight. 2: Cut your veggies and apples and add to a baking sheet; season with olive oil, salt, pepper, espelette pepper, and Italian seasoning; roast at 400°F for about 30 minutes. 3: Take tenderloins out of the marinade, pat dry, brush with honey Dijon, and season with chipotle seasoning then pan-sear in olive oil over medium heat on all sides. 4: Transfer tenderloins to the veggie tray, pour some of the pan drippings over, and finish cooking for another 25-30 minutes or until the internal temperature is at 145°F. 5: Add the remaining marinade to the pan and reduce to a desired thickness then strain. 6: Let cool for a few, slice, pour sauce over, and enjoy!
