1. Preheat oven at 400 F; 2. To a sheet pan add tomatoes, Kalamata olives, onions, garlic, lemon slices, olive oil, white wine, oregano and black pepper; mix and roast for about 15-20 minutes; 3. Season fish with olive oil, salt, pepper and lemon zest; 4. Add spinach and gently mix with the roasted veggies, nest the fish, crumble feta cheese and put back in the oven until fish reaches 145 F for about 20 minutes; 5. Finish with dill, serve with lemon and enjoy!
