1. Wash and de-seed peppers and semi peel cucumbers and thinly sliced them; slice red onion and chop parsley; 2. Throw everything into a salad bowl and crumble some feta cheese; 3. To make the dressing- whisk olive oil, red wine vinegar, lemon juice, salt and pepper; 4. Pour dressing over, mix well and enjoy the crunch!
