Wash, chop your peppers and onions and sauté in olive oil until softened over medium-high heat; season with Mexican/taco seasoning, salt and pepper and add drained black beans and the juice of a lime; Season and grill your steak to desired temperature and chop it; Shred some cheese of choice; To assemble- melt butter over medium heat, place your tortillas on the pan and start layering cheese, pepper, onion and bean mixture, steak and more cheese on top; Fold tortillas and sear both sides until the cheese melts; Serve with Picco de Gallo, sour cream and guacamole and enjoy! Notes: Always shred your cheeses for the best melting results!
