1. Add chia seeds, maple syrup and coconut milk to a container and stir; wait 10 mins stir again to prevent clumping; 2. Cover and refrigerate for 2 hours or overnight; 3. Peel, chop and using an immersion blender purée the mango as you reserve a few spoonfuls to top it off; 4. Once chia pudding has thickened- add it to a cup, layer mango purée, top with mango chunks and enjoy!
