Julienne carrots and cucumbers and thinly slice purple daikon radish; marinate in water, rice vinegar, sugar and salt for a few hours or overnight; 2. Add pork shoulder to a Dutch oven and pour a mixture of water, rice vinegar and fish sauce over then sprinkle the seasonings on all sides; cover and roast at 350 F for about 4 hours or until fork tender; 3. Shred the meat and remove the fat; pour some of the drippings over the meat and pop in the oven for 10 mins to caramelize the edges; 4. To make the aioli- mix all ingredients above; 5. Assemble sandwiches by slathering spicy aioli on the bread, add plenty of shredded pork and pickled veggies, oh and some cilantro leaves and enjoy!
