1. Chop poblano and cube chicken breast; 2. Sauté chicken 2 tbs in olive oil, season with salt, pepper and taco seasoning; cook until golden and set it aside; in the same pan add 1 tbs olive oil and sauté the pepper for a coupe of minute, then add corn and lastly bring the chicken back into the pan, squeeze lime and adjust seasonings; 3. Prepare your guacamole- smash avocado and mix with the rest of the guacamole ingredients; 4. Add butter to a skillet, place your tortillas, add mixed cheddar and mozzarella, the chicken and corn mixture, more cheese; cook until golden on both sides and the cheese is melty; 5. Enjoy with guacamole or sour cream, or even both!
