Beat butter and sugars until creamy; add egg and vanilla; once incorporated sieve the flour and baking soda and mix again; lastly add the chocolate chips; Preheat oven to 350 F; Cut croissants lengthwise and stuff them with cookie dough and add some on top; optionally sprinkle some flaky sea salt and bake for about 20 minutes; then dig in!!
