1. Pat dry, trim (if needed) and cut beef into large cubes; season with salt and pepper; dredge in flour and sear in olive oil until caramelized on all sides; add onions, tomatoes and garlic and sauté until slightly charred; season with salt and pepper; 2. Add beef stock, vinegar, peppers and all the spices and seasonings; cover and transfer into a preheated oven at 350 F for about 2.5 hours or until fork tender; 3. Remove meat and shred it, it should be falling apart; 4. Strain the sauce through the sieve as you squeeze all the vegetables; if you want to easily remove some of the fat, add ice cubes to the warm sauce (not hot) and the fat would stick to the ice; 5. Add some consome to the shredded meat; 6. Assemble our sandwiches and grill on both sides until cheese is melty (I like to help the melting process with a torch a bit) and enjoy!
