1. Thaw puff pastry according to package instructions; 2. Wash, slice and macerate apricots by mixing them with sugar, maple syrup and melted butter; 3. Mix room temperature cream cheese with sugar and vanilla; 4. Gently roll your pastry and cut into 8 rectangles; score the edges and add about 1 tbs of cream cheese mixture and top with sliced apricots; 5. Brush egg wash and sprinkle coarse sugar on the edges; 6. Transfer into the freezer for 10 mins, the bake in a preheated oven at 400 F for about 22-25 mins; 7. Finish with powdered sugar, mint
