1. Cut cauliflower into florets and rice it in the food processor in batches; add it to a cheesecloth and squeeze the water out; 2. Mix riced cauliflower with mozzarella cheese, eggs, salt and pepper; 3. Line the cauliflower mixture on a parchment paper, smooth it out with a spatula and bake at 400 F for about 30 mins; 4. Flip the parchment paper and peel it off; 5. Layer your cheeses, toppings of choice, more cheese and bake at 400 F for another 10 mins and enjoy!
