1. Defrost Puff Pastry according to package instructions; 2. Wash and pat dry blueberries and set aside; 3. To make the filling- mix cream cheese, sugar, vanilla, lemon juice and zest; 4. Add your puff pastry to a floured surface, gently roll to flatten it out; use a cookie cutter to make the rounds and smaller size cookie cutter to score (don’t cut all the way through); 5. Add a spoonful of the cream cheese filling, blueberries, brush egg wash and sprinkle coarse sugar and bake in a preheated oven at 400 F for about 20-25 mins; 6. Finish with powdered sugar, mint leaves, lemon zest and enjoy!! Ps: save the leftover puff pastry dough for a pie topping!
