1: Peel, wash and slice potatoes with a crinkle cut knife as you flip the potato diagonally every time. 2: Toss potatoes in an iced bath for at least 5 minutes to get the starch out. Pat dry and season with olive oil, mix and throw in a preheated air-fryer at 375 F for about 8 minutes (depending on thickness) as you flip/shake them halfway through. Don’t overcrowd the air fryer; cook in batches. 3: To make the aioli, mix all ingredients above. 4: Once potatoes have cooked, season with salt, dip in the delicious aioli or ketchup and enjoy!
