1: Slice and dice all your peppers and onions then cube the beef chuck. 2: Toast your spices over medium heat for 1-3 minutes to get that smoky flavor. 3: Add olive oil to a Dutch oven, sauté your chuck and set aside. 4: Add more olive oil and sauté the peppers and onions until softened. 5: Add the meat back to the pot along with tomatoes, beer, drained beans, beef broth, toasted spices and chipotle in adobo sauce; bring to boil, then cover and finish cooking in a preheated oven at 350 F for about 1 hour or until meat is super tender. 6: Garnish with sour cream, sharp yellow cheddar cheese, chives, lime, avocado, tortilla strips, jalapeño and enjoy.
