1. Add water, salt, yeast, oil, flour and honey to your mixer bowl with the hook attachment; alternative you may knead by hand; 2. Knead for about 5-7 mins until the dough starts separating from sides of the bowl; 3. Fold the edges of the dough several times to stretch the gluten strands and shape it into a ball; 4. Add dough to a greased bowl, cover it and let it rest for at least 3 hours at room temperature or in a zipper bag overnight; 5. To make the Buffalo chicken mixture- cube chicken breast and mix with cream cheese, blue cheese crumbles, Buffalo sauce, cheddar and mozzarella; 6. Roll room temperate dough on a floured surface and cut 12 squares and place them into the greased muffin pan holes; add a large scoop of Buffalo chicken and sprinkle cheese on top; bake at 400 F for about 15 mins until the dough is golden and cheese is bubbly! Note: This dough is enough to make 2 trays!
