1: Brew espresso and set aside. 2: Whisk the egg yolks with sugar over a water bath at medium low temperature until fluffy (about 7 mins). 3: Whip 1 cup of heavy whipping cream until stiff peaks. 4: Whip mascarpone with 2 tbs of rum. 5: Add in egg mixture and mix, then gently fold in whipped cream. 6: Add 1 tbs rum to the espresso, and dip lady fingers in it. 7: Layer the tiramisu mixture in a 7 inch spring form, making 3 layers. 8: Reserve some tiramisu mixture to decorate the cake with a piping bag. 9: Cover and refrigerate for at least 6 hours or overnight. 10: Dust with cocoa powder before serving.
