1: Add coconut rice ingredients to a rice cooker and set aside. 2: Slice the red pepper and clean the snow peas. 3: Slice the fish into pieces and season with salt and pepper. 4: Add avocado oil to a pan and sauté ginger and garlic until fragrant. 5: Add red curry paste, coconut milk, coconut sugar, fish sauce, lime zest and juice, salt, and pepper, then add the fish. 6: Cover and cook for about 2 minutes. 7: Add peppers and snow peas, cover, and cook for a few more minutes. 8: Pour the cornstarch slurry and top with cilantro. 9: Serve with coconut rice, top with cilantro, crushed red pepper, and enjoy!
