1. Add egg yolks to a bowl and add a drop of avocado oil at a time until you see it’s emulsifying then you can add the oil faster; 2. Once the oil is all absorbed, add rice vinegar, lemon juice, Dijon mustard and salt; mix well and refrigerate up to 3 days! Enjoy!
