1. Slice your red onion and add to a jar along boiling water, rice vinegar, salt, sugar, peppercorns, garlic, lime juice and rind; let them sit for a few hours or overnight; 2. To make the avocado crema- grind garlic and jalapeños, smash the avocado and mix with sour cream, cilantro, cumin, lime juice + zest, salt and cilantro; 3. Season fish with all the spices above and sear in olive oil for about 3-4 minutes per side; 4. To assemble- char your charred tortillas and add the avocado Crema, romaine lettuce, bronzed fish, pickled red onions, Cotija cheese, squeeze of lime and enjoy!
