1: Wash, peel and slice eggplants into strips; soak in cold salted water for 30 minutes. 2: Pat dry eggplants really well, coat in flour and deeply fry in avocado oil at 350 F until golden on both sides. 3: To make the sauce, mix all ingredients above. 4: Smear yogurt tahini sauce on a platter and place eggplants on top; finish with parsley and pomegranate molasses.
