1. Add rice, water, olive oil and salt to a rice cooker and let it cook; 2. Cube your chicken thighs and season with salt, pepper, cornstarch and olive oil and toss to combine; 3. Heat frying oil to 350 F and fry the chicken in 2 batches until golden or internal temperature is 165 F; set it aside; 4. Sauté garlic in olive oil and add sweet chili sauce, soy sauce, rice vinegar, sesame oil and ketchup and bring bring to boil; add chicken and stir to coat; 5. Serve chicken over rice with sesame seeds, chives and enjoy!
