Authentic Beef and Potato Tostadas

This one is a staple at my home and make them quite often as they are so easy and everyone loves them! The potatoes add a creamy texture and a richer taste, don’t skip them, even if you think potatoes don’t belong in Tostadas!

Chop your onion and potato and sauté over medium heat in olive oil, salt and pepper; cover and cook until softened
Make a well and add your ground beef, season with your Mexican seasonings, salt and pepper and cook the beef on its own for a few minutes then mix with the potatoes and onions; cook until no more pink; optionally remove some of the excess fat out
Top tortillas with beef and shredded cheddar; bake at 400 F until the cheese is melty, it should take about 8 mins
Top with lettuce, avocado, sour cream, Picco De Gallo and enjoy!
