Thinly slice cabbage and chop the onions, tomatoes, Cubanelle pepper, cucumber, parsley and dill; shred the carrots and throw into a mixing bowl
To make the dressing- add EVOO, red wine vinegar and salt to a jar and give it a shake
Pour dressing over, mix and enjoy!
