My Baba’s (grandma’s) stuffed peppers

Growing up in Bulgaria we used to spend every single summer with my grandparents in the countryside. This meal is as nostalgic as it gets because my grandmother used to make it all the time worth her homegrown produce and homemade feta. This is such a light, juicy and refreshing meal and perfect for spring/summer!

Cut tomatoes into 8 pieces and add to a greased baking dish, then slice the garlic on top and season with salt, pepper, olive oil and mix
Crumble the feta and mix with the eggs, parsley and black pepper
Remove the pepper stems and de-seed them; stuff the peppers and arrange them on top of the tomatoes as you elevate the open side over more tomato slices so the egg/feta mixture doesn’t leak
Season with salt, pepper, parsley and olive oil and cook in a preheat oven at 400 F for about an hour
Finish with more parsley, peel (optionally) and enjoy!
