Wash and slice your eggplant, season with salt and layer on paper towels to get the excess moisture out
Brush eggplant with olive oil and air fry at 390 F for about 10-12 mins as you flip it half way through
Assemble your board with sliced heirloom tomatoes, eggplant, burrata, toasted sourdough bread and pesto and enjoy!
